Could Thanos kill Thor with the Power Stone?

There is no question. Thanos could’ve killed Thor without using the Power Stone. He beat down the Hulk without using any more of the Stone’s energy than what was put in his body when he picked it up. Thor could’ve been strangled, snapped, beaten, or simply torn in half without the use of the stone.

Would Hulk have beaten Thanos if he didn’t have the Power Stone?

So as much as people have this gripe that the Russo Brothers made Thanos overpowered in Endgame for dramatic effect or to just force a proper villain, they must understand the Infinity War Thanos was softened by the Stones, but this one wasn’t.

Why is Thanos still green?

Remember, in Endgame, Thanos hadn’t touched the power of Infinity — especially the Soul Stone — so one could consider him still green.
