Is it on the evening or in the evening?

In the evening is best used when there is a list/calendar of things that happened during the day and the intention is to show how the time was spent. On the evening is best used when we speak of, announce, or inform of a single event.

Is saying yesterday night correct?

You cannot say yesterday night because the night is also part of today. You can, however use both last evening or yesterday evening, because the evening is part of yesterday, as would be yesterday morning and yesterday afternoon.
